Saint Patrick's day is a few days away, and if you need a last-minute, fun rainbow dessert to serve at your party, then this rainbow chocolate bark is it! It's so fun to make (and eat), and the kids can totally get involved too!
I've seen so many rainbow bark recipes over on Pinterest where you basically throw a bunch of colored candy onto melted chocolate. But I really wanted a distinctive and unique "rainbow look" to my bark, so today I'm sharing with you a couple of new ways to make rainbow chocolate bark! 🌈🍫
Rainbow Chocolate Bark Recipe 2 Ways
Who knew there were so many ways to make rainbow bark? Yep, it turns out your imagination is the only limit! 😋
This colorful dessert or sweet treat is perfect for Saint Patrick's Day of course, but I can also see it atop a rainbow or even a unicorn birthday party!
These colorful shards of chocolate also make great party favors, classroom or neighbor gifts. And did I mention it's super easy to make too?
Granted, it's not quite as quick as throwing colored candy onto melted chocolate. And there's nothing wrong with that. But if you want a chocolate bark with a little more "wow factor", then you can't go wrong with these ideas I'm gonna share today! 😁
The first rainbow chocolate design I thought of was a marbled, swirl effect created with colored candy melts. But when I thought about it, it wouldn't give me the "real rainbow look" that I was searching for.
So I decided to make it a little differently. Check out the video below to see how!
Oh, and I must mention that in the end, I also changed the ingredients a little and didn't bother buying candy melts in all the colors of the rainbow.
Basically, I couldn't be bothered to go shopping, and wanted to use what I had to hand - white chocolate and oil-based food coloring (from Wilton).
It's very important you use oil-based gel food coloring if you go the route of making your own colored chocolate. If you use water based food coloring, your white chocolate will just seize-up up and become a hot mess!
So be sure to check the label! I bought my food coloring a while back from Amazon, when I made this rainbow cake.
You can of course use colored candy melt to speed up the process, or if you're making a huge batch of rainbow bark. But you only need like a tablespoon of each color for this recipe, so you may end up with some left over candy melt.
I love how pretty this bark turned out, and how gorgeous those rainbow lines looked!
And BTW, the "crazy messy" pattern you can see on one of the pieces was formed when the parchment paper got stuck accidentally onto the bark when I went to place it in the freezer 🙄 But, no biggie, it's all edible after all!
For the second rainbow chocolate bark, I wanted to literally draw the rainbow onto the bark. And after brainstorming with my husband, he gave me the idea to use sugar sprinkles to create a rainbow-like pattern on the chocolate.
It sounds a little odd, but it turned out so pretty! Almost like edible art 😊

Rainbow Chocolate Bark Recipe 2 Ways
Rainbow Chocolate Bark Recipe 2 Ways - an easy and fun sweet treat to make for Saint Patrick's Day or for a rainbow or unicorn birthday party!
ingredients
- 1.2 kg or 42 oz white chocolate (for both designs)
- oil-based gel food coloring in rainbow colors - for the rainbow swirl design only
- 1-3 teaspoons sugar sprinkles in rainbow colors - for the sugar sprinkles design only
instructions
Swirl Rainbow Chocolate Bark
- Melt 600 g or 21 oz of the white chocolate in the microwave at 30 second intervals until smooth.
- Separate about 2 tablespoons of the melted white chocolate into 6 different small bowls for each color: red, orange, yellow, green, blue and purple
- Add a little of the food coloring to each bowl to create your rainbow colored chocolate.
- Pour the remaining white chocolate onto a baking tray lined with parchment paper, and smooth it out with the back of a spoon to form a large rectangle.
- Add a tablespoon of colored chocolate in a line across the width of the chocolate. Repeat for all the colors.
- Use a toothpick to create your swirl pattern, dragging it from left to right on the surface of the chocolate.
- Let it set in the freezer for a bout 10 minutes, then break up the bark into shards with your hands or a sharp knife.
Sugar Sprinkles Rainbow Chocolate Bark
- Melt 600 g or 21 oz of the white chocolate in the microwave at 30 second intervals until smooth.
- Pour the white chocolate onto a baking tray lined with parchment paper, and smooth it out with the back of a spoon to form a large rectangle.
- Add the colored sugar sprinkles in a circular pattern all over the white chocolate.
- Repeat for all the color in order: red, orange, yellow, green, blue and violet.
- Let it set in the freezer for a bout 10 minutes, then break up the bark into shards with your hands or a sharp knife.
NOTES:
You can also use colored candy melts instead of coloring your own chocolate to save time.
