My love for potatoes runs deep. I never really understood how much of a potato gal I was until now. I’m talking simple, plain microwaved potatoes with a tad bit of sour cream. That’s it. My perfect go-to weekly meal.

Yes, I will say it again: I love potatoes! They are soooo versatile.

Potatoes are in our dairy-free alfredo sauce (yes, those perfect potatoes are in there), plus you can grill them, mash them, and don’t even get me started with that amazing potato starch. You know how much I lovvvvveeee potato starch. // It was in my birthday cake last week.

My love for potatoes definitely runs deep, not just because they taste amazing, but because they are packed with potassium, along with other amazing nutrients.

Dairy-Free Crockpot Broccoli Soup recipe made healthy! It's delicious, it's creamy, and it is chock-full of potatoes and broccoli! Best way to a hearty, warm, and filling meal. {Gluten-Free, Dairy-Free and Vegan friendly}

Ingredients:

  • 7-8 Idaho potatoes, peeled and chopped
  • 1 medium onion, chopped, apprx 1 cup
  • 32 ouncesvegetable broth
  • Pinch of salt and pepper
  • 2 1/2 cups chopped broccoli, fresh or frozen
  • 2 cupsunsweetened almond milk
  • ½ cup sour cream (or dairy-free cream cheese/yogurt)
  • 1/2 cup dairy-free cheese, shredded

Directions:

  • 1. Add potatoes, onion, broth, salt and pepper to crockpot.
  • 2. Cover and cook on low 4-5 hours or until potatoes are tender and fall off a fork.
  • 3. Using animmersion blender, blend until soup reaches desired thickness.
  • 4. Add milk and sour cream ( See Notes on Dairy-Free Swap Options).
  • 5. Stir in broccoli, Cook on high for 1-2 hours. (Generally 1 hour for fresh broccoli, 2 hours for frozen).
  • 6. Top with extra salt, pepper and cheese.

      Don’t be scared! 🙂 So I’ll be honest, I haven’t tried THAT many of them. I’m not lactose intolerant, sometimes though my tummy just needs a break from dairy (especially after I’ve been glutened). The one I buy most often on my dairy breaks is Daiya, but once in a while I’ll switch to Go Veggie. Both are decent, granted not the real thing, so when my tummy can do it I go for the real sharp cheddar. 😉

        FYI….Go Veggie is not dairy free…it contains casein which is from milk…I only know because my daughter is a very strict vegan :>)

          Mmm perhaps you are referring to their lactose-free products?? Then in that case you are correct they are not vegan. BUT Go Veggie actually has a Vegan product line that are indeed vegan and dairy-free. They’ve made a Vegan version of all their products. Perhaps that will help for future recipes! :))

    one question: Most soups with trhese ingredients put them thru some sort of a blender at the end, but this one does the blending and then cooks the broccoli. Wouldn’t you be blending again after the broccoli is cooked?

      We personally found that the broccoli broke down enough for our liking. If you would like to have it more pureed then go ahead and do so at the end. 🙂
